Adulting and an amazing surprising summer salad combo

I tend to procrastinate, I put off things I don't want to deal with till Kingdom come. One of these things is the tax return which Brian has done in the past. Since he's moved out right now I ended up just putting my medical costs together and finding out that the Irish tax return is now super simple and online. I put everything in and the next day I got a notification how much money I was getting back. It wasn't a huge amount but every little bit helps.

The tasty salad was something I've been wanting to try for a while, I'm not usually fond of water melon but I'd seen several sweet savoury salad combinations with it so I made a version of Nigel Slater's.

Equal parts of bite sized tomatoes and water melon, a few finely chopped green onions (these should be refrigerated for a bit to make sure they are nice and cool)
Just before serving add:
A good glug of extra virgin olive oil
a drizzle of good balsamic vinegar (Slater doesn't have this in his recipe and he added chilli which I omitted, he has a habit of throwing chilli on everything that I find unnecessary.)
Salt and fresh ground black pepper to taste.
Grill about half a packed of halumi per person.
Toast some ciabatta, rub with a clove of garlic

To serve toss all the veggies and dressing, pile on a couple of pieces of the grilled ciabatta and place the grilled halumi on top.

So damn tasty. The only problem is that a full melon makes a ton of salad so this would be great for a garden party.

The cook in our work canteen made a salad of water melon, green beans and feta. I loved it.
